Buffalo Cauliflower Bites

Nothing says football season like a big batch of cauliflower “wings” right? Well, they may not take the place of chicken wings but they still are really tasty and filling!

If you’ve been following my blog, in a previous post I had featured a recipe for Sticky Sesame Cauliflower Bites which were really yummy – even my husband liked those. I rarely have a recipe in mind when I buy my cauliflower, but it doesn’t take long to come up with a way to use cauliflower as a more healthful substitution.

Buffalo cauliflower isn’t anything new and you may have made this appetizer already. I was looking for a coating that was a bit healthier than traditional flour.  I had almond meal but it had a lot of calories so I went with some falafel mix I had in my pantry.  Basically this is chick pea flour mixed with a little wheat flour. This coating became a little bit of a loose paste that added a little texture to the cauliflower and gave the sauce something to stick to.  You can use any type of flour you have on hand.

These were so good I gobbled them up with a dip I made with avocado and sour cream.  A nice healthy way to get in that buffalo flavor without the added fat from the chicken wings and blue cheese dressing.

Recipe

1 small head of cauliflower, cut into florets

1/4 cup of flour (white, wheat, almond, chick pea, etc)

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

1/2 teaspoon of paprika

1/4 to 1/2 cup of water

1/2 cup of bottled hot sauce

In a food processor mix the flour, garlic and onion powder, paprika with 1/4 cup  of water.  Add more to thin out the coating so it’s not quite a paste.

Spoon mixture into a medium bowl and toss with florets. Space each floret on a baking pan and bake at 400 degrees or air fry for about 10 minutes. Remove from oven and toss with the hot sauce.  Add the cauliflower back in the oven for 5-10 minutes. Serve with your favorite dip.
